- Whole Grain Bread
- Ripe Avacado
- Tajin Seasoning
- Cotija Cheese
- Grape Tomatoes cut in halves
- Green Tabasco (optional)
Heat Blackstone to low heat & put bread on to start toasting.
Add small amount of butter or oil to cook eggs in if desired.
Crack one egg per toast and add salt & pepper to eggs.
Cut avocado in half and slice thinly. Spread across toast & season with salt, pepper & Tajin seasoning.
Add grape tomato halves.
Add over easy egg on top of the avocado.
Sprinkle with Cotija cheese & extra Tajin seasoning (& some green Tobasco, optional)
