- 2 Tablespoon of Butter
- 3 Cups of Corn (4 ears)
- 1/2 Jalepeno No Seeds
- 3 Tablespoons of Mayo
- 1 Clove Garlic
- 2 Green Onions
- 1/2 Bunch of Cilantro
- 1 Lime
- 1/4 Cup of Cotija or Feta Cheese
- Tajin Seasoning (optional)
Remove corn from the cob if using fresh corn.
Heat Blackstone griddle to a medium heat. Melt the butter and add the corn and toss until cooked and well charred. This takes about 5-10 minutes.
Seed jalapeno and mince. Chop cilantro.
Mix mayo, jalapeno, garlic, green onions, cilantro, lime and cheese together in a bowl. Then add the charred corn & toss together until well mixed. Top with Tajin seasoning for extra flavor if desired.
Serve warm or at room temp with whole grain tortilla chips!
