  • 2 Tablespoon of Butter
  • 3 Cups of Corn (4 ears)
  • 1/2 Jalepeno No Seeds
  • 3 Tablespoons of Mayo
  • 1 Clove Garlic
  • 2 Green Onions
  • 1/2 Bunch of Cilantro
  • 1 Lime
  • 1/4 Cup of Cotija or Feta Cheese
  • Tajin Seasoning (optional)


  1. Remove corn from the cob if using fresh corn.

  2. Heat Blackstone griddle to a medium heat. Melt the butter and add the corn and toss until cooked and well charred. This takes about 5-10 minutes.

  3. Seed jalapeno and mince. Chop cilantro.

  4. Mix mayo, jalapeno, garlic, green onions, cilantro, lime and cheese together in a bowl. Then add the charred corn & toss together until well mixed. Top with Tajin seasoning for extra flavor if desired.

  5. Serve warm or at room temp with whole grain tortilla chips!
